At Logothetis Organic Farm in Zakynthos, we have proudly preserved the art of traditional olive oil production, using millstones and hydraulic presses—a method that connects generations of Greek farmers with today’s standards for high-quality, organic food production.

This artisanal process is far from industrial. It demands training, experience, and time, but the result is a truly exceptional product. Our cold-pressed extra virgin olive oil is made without the use of water and at low temperatures, ensuring the oil retains its full nutritional value and natural properties.

The outcome? A mild, almost sweet olive oil, rich in antioxidants and ideal for both tasting and cooking—just as it has been in the Zakynthian countryside for centuries.

One of the few working traditional olive oil mills in Zakynthos, our farm offers visitors a chance to experience this time-honored method up close through guided olive oil tastings, educational visits, and hands-on learning.

Estate

At Logothetis Organic Farm in Vasilikos, Zakynthos, we produce artisanal extra virgin olive oil—the exclusive product of our family-owned olive groves, passed down through generations and rooted in respect for the land.

Our olive oil is a true estate olive oil, much like a fine estate wine—prized for its distinctive character shaped by the land itself. Factors such as sandy soillow altitude (120–150 m), close proximity to the Ionian Sea, and the unique Mediterranean island microclimate give our olive oil its signature aroma, color, and flavor profile.

Cultivated through arid, organic farming practices and produced using traditional methods at our on-site olive press, every drop of our olive oil reflects the purity of its origin. These natural elements—combined with skilled harvesting and pressing techniques—create a product rich in nutrients, mild in taste, and deeply tied to the Zakynthian landscape.

Our traditional olive oil production method is intentionally slower, more labor-intensive, and rooted in respect for the land. This careful, low-intervention process ensures that the final product retains its highest nutritional value, rich in antioxidants, polyphenols, and essential nutrients.

The Zero waste project

At Logothetis Organic Farm in Zakynthos, we are proud to operate the first and only zero-waste olive press in Greece—a bold step in our mission toward truly sustainable olive oil production.

A major environmental issue in the olive oil industry is the liquid vegetable water waste produced during processing. Traditional olive presses create up to 2.5 liters of waste per 1 liter of oil—while modern centrifugal systems generate up to 6 liters of waste per liter.

In collaboration with the Horticultural University of Athens, we've implemented an innovative integrated processing system that transforms this liquid waste into a natural, organic fertilizer—immediately reusable in our own olive groves. This closed-loop method creates a true circular economy model for our farm.

Our zero-waste olive oil production reflects our deep respect for the land and commitment to eco-friendly farming in Zakynthos. It’s part of a bigger vision: protecting the environment, producing the highest quality extra virgin olive oil, and ensuring a better future for the next generation.
